This is a very satisfying salad! Soaking the chopped onions in cold water removes some of the sharpness and makes for a more mellow flavor. For the nut/raisin mix, I like to use Great Value Omega 3 Trail Mix, which contains walnuts, almonds, pumpkin seeds, and raisins.

Kale
1 small onion, coarsely chopped
2 small apples, chopped into ½ inch pieces
Balsamic vinaigrette dressing
1 cup nut/raisin mix
Salt and pepper
INSTRUCTIONS
Put the chopped onion in a bowl and cover with cold water; set aside. Tear kale into bite-sized pieces, removing woody parts, enough to fill about 2/3 of a large mixing bowl. Chop the apples. Pour onions through a strainer to remove all the water. Put the onions and apples together in a bowl or a bag. Pour 2 - 3 tablespoons of balsamic vinaigrette dressing over the onions and apples and mix to coat. Add apples, onions, and trail mix to the kale. Drizzle 2-4 more tablespoons of vinaigrette over the salad. Sprinkle with a little salt and pepper to taste and toss. Good served immediately, and even better if you let it sit for a few hours in the fridge before serving.
