Green Beans Almondine

I receive requests for this recipe nearly every holiday season, so I'm taking that as a kick in the pants to start posting on this blog after a way-too-long time away. I'll add a photo next time I make these. In the meantime, enjoy!


Ingredients


1 lb fresh green beans

¼ cup raw sliced almonds

½ tsp salt

¼ cup water

2 Tbsp unsalted butter

Black pepper to taste

Dash of garlic powder to taste


  1. Snap of the bean ends and then snap the beans into 3-4 inch sections. Rinse beans in a colander and set them aside to drain. 

  2. In a large cast iron skillet, toast the almonds over medium-low heat for about 3 minutes, stirring constantly, until they begin to turn golden brown. Immediately remove the almonds from the skillet and set them aside in your serving dish. 

  3. Add the prepared green beans to the skillet with ¼ cup water and 1/2 tsp salt. Cover and cook over medium-high heat for 1-2 minutes. 

  4. Remove the lid from the green beans and continue to cook them, stirring frequently, for another 2-3 minutes until the water evaporates and the beans are slightly tender. 

  5. Add butter to the skillet and continue to cook, stirring frequently, another 2 minutes, or until beans are almost the desired tenderness.  

  6. Add the toasted almonds back into the skillet with the beans, season to taste with pepper and garlic powder, stir over heat 1-2 more minutes. Serve hot.
