These carrots are not boring! The flavor is intense and delicious. Two pounds of carrots sounds like a lot, but they cook down to a much smaller amount. Makes about 6 modest servings.

2 lbs carrots
¼ cup butter
¼ cup honey
1 tbsp ginger powder
2 tbsp lemon juice
Salt and pepper to taste
Pre-heat oven to 425 degrees. Put a big pot of water on to boil. Cut the carrots into uniform bite-sized pieces. Add all the carrots at the same time to the boiling water, turn off the heat, and leave them for 5 minutes. Drain the water from the carrots and spread them on a dish towel; blot to remove excess water. In a microwaveable bowl, mix butter, honey, ginger powder, and lemon juice and microwave for about 30-45 seconds until the butter is melted and it is easy to stir this mixture into a sauce. Put the carrots in a large owl and drizzle the honey sauce over them, stirring to coat carrots. Line a large cookie sheet or two smaller baking pans with foil or parchment paper. Spread the carrots onto a single layer on a large cookie sheet or two smaller baking pans. Sprinkle with salt and pepper to taste. Put them in the oven for 15 minutes; stir the carrots and return to the oven for 10 minutes at a time until they reach your preferred level of tenderness. If you like a little more caramelization, broil for the last 5-10 minutes.
